Savour a terroir...

A ‘terrine’ of culture as a starter: Puilaurens, Peyrepertuse or Montségur, those magnificent Cathar castles. You have to visit at least one of them. But there is more than just Cathar history: beautiful spots like the village of Cucugnan or the medieval town of Mirepoix; the mystery of the village priest of Rennes-le-Château who suddenly became so rich that even Rome got involved; museums for hat making and dinosaurs at Espéraza; abbeys like that of St.Hilaire where Blanquette de Limoux, mother of all sparkling wines, was invented well before champagne.

As a main course, take in the landscape and nature of unforgettable beauty and flavour, from the breathtaking peaks of the Bugarach to the deep gorges of  Pierre-Lys and Galamus. Maybe a little drink in between? How about a day-trip over the Cols of the Tour de France before shopping in Andorra? Of course we mustn’t forget Carcassonne itself, without a doubt the best preserved walled medieval city in France.

For dessert we propose visiting the vineyards of this expanding wine region steadily gaining recognition, some of the lively local markets and the small producers who offer regional specialities of gastronomic delight.

The Aude valley, our corner of the Pyrenees, is a ‘terroir’ to savour endlessly… with all your senses.
